Possibly the easiest, no hassle, fresh tasting, minimal cooking required pasta meal ever!

What you’ll need for 4 persons:
– 1 pack of spaghetti or any pasta of your choice
– Freshly grated Parmesan cheese

For the sauce:
– 4 sun ripened plum tomatoes
– Olive Oil
– Oregano
– 2 gloves of garlic, crushed
– Balsamic vinigar
– 1 can of black olives
– 3 handful of rucola leaves

Bring a large pan of salted water to the boil for the pasta.
In the mean time, wash and chop your tomatoes into small blocks, add them to the bowl , drizzle with olive oil (don’t forget to add some for the pasta too), sprinkle some dried oregano, squeeze in the garlic, add half a can of the olives, and a big dash of balsamic vinegar, leave it to marinate.
When the water is boiling, add the pasta and cook for about 8 -12 minutes until al-dente.
Drain the pasta and add it straight to the bowl, mix the pasta with the tomatoes, last but not least add the rucola leaves and combine.
Add some freshly grated parmesan cheese to finish it off.
